Back to School should be a national holiday. So much is made of New Year’s Day, but in reality, the new year starts—for many households—around September 1st when the kids head back to the books.
While you’ve got to put “make lunches” back on your nightly to-do list, you’ve also got to think about the other two square meals the little (and big) people in your house need to eat. To start the day out right, breakfast needs to pack a punch (there’s no such thing as a sugary cereal that actually helps kids focus), and dinner, most weeknights, needs to be compelling enough to gather the troops, but easy enough to prepare in about a half hour, if you’re going to make it to practice on time.
We’re easing the family back into major busy mode with some ideas for back to school meals and snacks. Yes, snacks! Teachers get the shiny red apples; kids want a 3 o’clock cookie.
