This is a delicious appetizer. Most olive dips I have had are very heavy from cream cheese, etc, but this is light on the tongue. The flavors, however, are strong!! I only used 6 anchovies instead of 12 (!!) and that was a lot-- even for us anchovy-lovers. I had this with a couple of baguettes from a local bakery-- excellent and very easy. I got a lot of comments on the appearance of this dip, as it has a light, almost minty look to it-- all confusion vanished with the first bite of olive/anchovy/garlic flavor-- yowsah!
