Cook the Issue 2010: South Indian Style Vegetable Curry

We love curry-- well, to be specific, my husband and I love curry-- my daughter, well, not so much.  So, we devoured this dish-- it delivers big, but harmonious flavor.  She whined and picked out the chickpeas to eat.  (But she ate the chickpeas).  Still, this is a great recipe-- I have not seen my husband eat so many vegetables in one sitting in a long time-- and he had seconds.  I added green beans because I love them in curry and skipped the spinach.  I made this mild, but garnished the adults' servings with minced hot lantern peppers. Woo woo-- that was a nice touch for a bit of heat-- I just wish I had remembered not to rub my eyes!

user-4713770 writes: When I was shopping the other day I made sure to buy everything for this dish as it really was the very first thing that I wanted to make out of the issue. I would also make a mild version and add some peppers for my serving.

Once we are past the "bbq something weekend" I plan to dive into more vegetable recipes.

DH's choice tonight, potato salad and baked beans to go with chicken, I like CI's version and will make that to use up the bbq sauce that I made yesterday.
