We love curry-- well, to be specific, my husband and I love curry-- my daughter, well, not so much. So, we devoured this dish-- it delivers big, but harmonious flavor. She whined and picked out the chickpeas to eat. (But she ate the chickpeas). Still, this is a great recipe-- I have not seen my husband eat so many vegetables in one sitting in a long time-- and he had seconds. I added green beans because I love them in curry and skipped the spinach. I made this mild, but garnished the adults' servings with minced hot lantern peppers. Woo woo-- that was a nice touch for a bit of heat-- I just wish I had remembered not to rub my eyes!
