Previously I wrote about alternative sweeteners in cocktails and tiki drinks for the print edition of Fine Cooking. When not doing that I spend my time working on geeky cocktail projects like attempting to make clear ice at home and checking the spoilage date of simple syrup.
Assuming you don’t have six months to watch syrup spoil, we’ll start this blog series with a simple summer cocktail I developed for a friend’s wedding and named after a YouTube video that gives me a chuckle: The Double Rainbow Cocktail.
The drink is just equal parts vodka and elderflower liqueur, diluted with soda water. The grapefruit bitters and lemon peel pull the drink together, so don’t skimp on the garnish!
The Double Rainbow

1 ounce vodka
1 ounce St. Germain elderflower liqueur
4 or so ounces of soda water
4 dashes of grapefruit bitters (Fee Brothers brand)
Lemon peel for garnish
Add all ingredients to a glass filled with ice and stir. Squeeze the lemon peel over the drink and drop it in.
Should you decide to throw one last summer-extending party, this drink can be made in bulk. Mix together everything but the soda water in advance. Then just add a splash of the liquor mix to each glass and fill with soda. That should give you more time to tend to the grill or your guests.
