Jam-Filled Ricotta Pastries, from Twelve: A Tuscan Cookbook.  Use your own homemade jam, or a nice gourmet jam from the market, for these Tuscan "Pop-Tarts."  Lovely for dessert, morning coffee, or afternoon tea.
