Cook the Issue 2010: Indian Summer Gratin

I love a good squash gratin-- the sweet, soft squash topped with cheese and crunchy breadcrumbs makes a great combination.  My previous favorite was from Deborah Madison's great cookbook Vegetarian Cooking for Everyone.  Well, you can probably see right away what the FC recipe has over my previous fave-- bacon!  I also like the combination of vegetables.  I didn't have any fresh corn, so I threw in some blanched kale-- an excellent addition, as the slight bitterness of the kale went well with the richness of all the other ingredients.  

I should have taken another photo to show what it looked like inside, but I was too busy digging in!  This was a hit with the husband too-- definitely a keeper!
