Cook the Issue 2010: Sweet Potato Puree with Sauteed Scallions

I have always loved sweet potato puree and the scallions in this recipe added a good new flavor.  Another plus, you can make this completely in advance and reheat in the oven and it still tastes great.  I'm really looking forward to trying the rest of the sweet potato recipes from this issue!
