Delicious! Now, with that being said, I'll tell you what I did or would do differently next time. First, I roasted butternut squash because sugar pie pumpkins weren't in yet and I remember reading once that most canned pumpkin was actually butternut squash anyways! Worked out great! Second, I think I would skip the candied ginger next time - I didn't really care for it. I might even use just pecans. Third - I had to add quite a bit of confectioner's sugar to my frosting because it was too runny - don't know for sure, but maybe my kitchen was too hot. In spite of this, I thought the cake was delicious. Maybe next time I'll make cupcakes with it!
