Cook the Issue 2010: Brown Butter Pumpkin Layer Cake

Delicious! Now, with that being said, I'll tell you what I did or would do differently next time. First, I roasted butternut squash because sugar pie pumpkins weren't in yet and I remember reading once that most canned pumpkin was actually butternut squash anyways! Worked out great! Second, I think I would skip the candied ginger next time - I didn't really care for it. I might even use just pecans. Third - I had to add quite a bit of confectioner's sugar to my frosting because it was too runny - don't know for sure, but maybe my kitchen was too hot. In spite of this, I thought the cake was delicious. Maybe next time I'll make cupcakes with it!

bushsu writes: This cake is fabulous! I made it for Thanksgiving dessert and it was a major hit! I live at about 6000 feet elevation, so I had to make a second cake and adjust it for the altitude. I made the first one as written, but it fell and was rather dense/goopy in the middle. Second one turned out fabulous. We all liked the ginger in the topping. ICDOCEAN1 writes: Thanks for the review. I have had the ingredients, but never got around to making the cake. I am just going to forget the pepitas, too hard to find unsalted and I have thought to make cupcakes as well, so maybe this week.

Baking is not my favorite sport in the kitchen so a problem withthe icing would just throw me off completely. Posted: 7:25 am on September 30th
