Cook the Issue 2010: Apple Parsnip Soup

It's getting to be the time of year when I like to take soup to work for lunch so I whipped up a batch of the apple-parsnip soup from the current issue's "what we're cooking now" feature.  The soup has a great earthy flavor and it's healthy too (well it was until I added the cream at the end!  I'm looking forward to enjoying this soup during the week.
