As a native New Englander, I am very fond of apple pie with cheese. My mom is fond of saying "A pie without cheese is like a kiss without a squeeze!" This tart was really delicious-- the combination of sweet apple, buttery puff pastry, and sharp cheddar is superb. For the salad, I could not find frisee, even at the more upscale market I tried, but I did have some nice, crunchy lettuce from my CSA. Very tasty.
The only downside to this recipe, is that I like my pie with a bit of juice or sauce-- if there was just a little caramel sauce with the apple, this dish would be out of sight. But, as it stands I go with the classic tarte tatin, for the sauce!
