Cook the Issue 2010: Quick-Braised Artichokes with Garlic, Mint, and Parsely

I bought some baby artichokes the other day and decided to make this quick recipe with them.  I ate one, and it was good, but I think I am going to go and get some tallegio cheese and use the rest to make another artichoke-tallegio fritatta!
