Cook the Issue 2010: Beef Wellington Part 3: Duxelles

Another component!  I had some really good cremini from the farmers market, so I used those for this recipe.  Wow, does my house smell like mushrooms-- and the duxelles are really delicious-- I wish I had doubled the recipe, just to have some to eat on crackers!  Into the freezer with this-- my next step is to set a date for Wellington-fest, source some chicken livers, pick the wine, and find a few meat-loving friends.
