With a little kid in the house, we bake a lot of cookies, so the Abby Dodge article in the new issue really caught my eye-- all those cookies look so great, especially these. Although these are supposed to be based on chocolate mousse, they are really way better-- they pack a big chocolate flavor, and the cookies has a brownie-like texture with a crackly outside, plus the filling provides a soft, smooth contrast. My filling didn't puddle, as it was a bit cool when it was going in-- my little "helper" was assisting with filling, so it was a bit slow. Mousse, schmousse-- give me more cookies. I saved some unfillled-- maybe I will put some caramel or raspberry jam in there. Mmm.
