This was really tasty. I went light on the bechamel sauce and I think that was a good thing. I tried making a croque madame once before and piled on the bechamel--soggy sandwich. Obviously I did not have leftover fresh ham, but I made two of these--one with proscuitto and one with turkey, and both were very good. The bread was shoku pan from my nearby Japanese bakery--it cooks up light and super crispy.
