Cook the Issue 2010: Chipotle Black Bean Dip

This black bean dip is light, yet very flavorful-- the richness of the beans and the smoky punch of the chipotles works well with the freshness of the cilantro.  Despite the richness, it has a light, almost fluffy texture that is perfect, even with a carrot stick.  Another dip I could eat with a spoon.
