Cook the Issue 2010: Carrot and Leek Soup with Croutons

This soup was thick and satisfying-- both my husband and I loved it and my daughter even conceded that she would eat it if there were no more noodles left.  I omitted the herbs in the croutons, as they violate Commandment #1 of kiddie food (at least from my daughter's perspective), which is: There Shall be No Green Bits Before Me.  Still tasty.
