I never cared too much for balsamic vinegar. The flavor just seemed too overpowering for anything it was paired with, except of course my favorite caprese salad.

However, My Kitchen Addiction's Balsamic Roasted Vegetables offers an extremely simple way of using balsamic to jazz up boring vegetables. Roasting vegetables in the oven screams winter, and I can't wait to see if combining balsamic and veggies will make me eat a little more of both!
