Starting a party with a sparkling cocktail is a fabulous way to get things rolling. We served these for the Wellington party and they were delicious and so festive. I also tried a couple of variants-- Marie Brizard Apry, which is apricot-flavored, made a good substitute for the Cointreau, but this combination was too sweet for some. For those folks, I used more Cognac and less Cointreau. Adding a bit of Campari might be good too.
