Ever crave summertime fair food, like frozen bananas dipped in chocolate, for dessert. Try the same dessert in cookie form.
¼ cup room temperature butter
¼ cup shortening
1 cup of sugar (7oz.)
1 egg, room temperature
1 cup of mashed banana (about 2 or more large bananas)
½ tsp. baking soda
2 ½ cups of all purpose flour (11 ¼ oz.)
1 tsp. baking powder
¼ tsp. salt
½ tsp. cinnamon
¼ tsp. nutmeg
1 and 1/3 cups of semi-sweet chocolate chips
Preheat the oven to 350°F. Cream the butter, shortening and sugar together until light and fluffy, about 5 minutes. Add the egg and continue to beat until the mixture is light and fluffy again.
In a large bowl, add the flour, cinnamon, salt, nutmeg, and baking powder. Sift or whisk to combine the ingredients.
Mash the bananas, measure out 1 cup of mashed banana, and add the baking soda to the banana, stirring it in and letting it rest two minutes.
Add the banana mixture to the egg-sugar mixture. Add the flour and mix until combined. Stir in the chocolate chips.
Use a #60-2tsp. scoop, and scoop cookies onto a silicone mat, or a greased piece of parchment lined cookie sheet. Bake 11-13 minutes, or until golden brown. Let cool two minutes on pan, remove to cooling racks and cool completely.
