This is a great recipe-- fast and easy, but so tasty. It was a big hit with my chicken-loving daughter and my chicken-apathetic husband. Last night he took a few bites of the roast chicken and said "well, I really don't like chicken that much...". But with the mojo sauce and a few shots of Marie Sharp's habanero sauce, he loved that bird! Two changes, I left the habanero out of the mojo in consideration of the kiddie palate. Also, instead of raw cutlets, I used leftover roast chicken, which I reheated and seared a bit in some olive oil. Excellent, this is a keeper.
