After 10 days of rich yet unsatisfying Disney food, a light shellfish stew seemed pretty appealing, so that was our dinner tonight. I used the local Maine shrimp that are now in season and only $5.99/lb. My grocery was out of escarole (?) so I doubled up on kale. I really liked the flavors in this dish. I think it might be a little too garlicky for a true holiday celebration, but for a dish shared between two people eating the same thing it was really nice. The only change I made was to sub in chopped fennel fronds for the parsley, just because I had them. I would definitely make this again.
