This recipe brought me right back to college. I wonder if the original inspiration came from the Moosewood Cookbook. I actually went and looked to see if I still had my original edition of that book, but I only have the revised "healthier" edition. Moosewood is what this tastes like--70's era vegetarian food. I swear my roommates and I made this a bunch of times back in the day. For today, It was OK, but needed another layer of flavor, at least to me. I saved the leftovers and am going to try mixing in some truffle oil and a little more salt.
