Cook the Issue 2010: Green Salad with Davey Apple, Prosciutto, and Avocado

We had bad luck with the pears from the market-- four out of four were rotten inside, but looked fine outside.  So, apple salad it is!  This salad is excellent-- nice and light, but with a great savory rich taste from the prosciutto and avocado.  It's the perfect accompaniment for Xmas leftovers!
