The winner: three out of four of us preferred the chewy sugar cookies-- that soft texture, sugary outside, and vanilla-y inside make for a great cookie. I used honey instead of corn syrup, as we didn't have any of the latter on hand. These cookies didn't spread as much as I expected, so I did mush them down with a glass. We called them mound cookies.
One warning-- double the recipe, as this doesn't make all that many cookies and the mounded shape makes them look smaller than they really are-- in the "both" picture, I used the exact same cookie scoop for both.
