Cook the Issue 2010: Poached Eggs with Creamy Brussels Sprouts and Bacon

We had this for dinner tonight.  Not too shabby for a Monday night.  I really liked the creamy brussels sprouts with the egg and crispy toast.  The parmesean and bacon were delicious of course also!  The dish was a bit rich from the cream and butter.  I wonder if the cream could be omitted successfully.  Something to try next time. 

I can see why people who don't love brussels sprouts would be perturbed by this dish in the morning, but I sure liked it.  ;-)
