I have to say that these recipes are so effective that I've almost used up all that kimchi already- but I bought another head of cabbage at the market today! Anyway, this soup is really easy-- it's just kimchi and hot water really. I didn't use any pork, as we were having this with pork buns. Instead I used chicken broth. My daughter loves noodles, so we had some udon instead of rice too. What a tasty, warming, hot, spicy soup-- perfect for a cold winter night. I thought it was really spicy, but my husband added some chili-garlic sauce to up the heat. Wow.
