This was a big hit! I loved, loved, loved the shortbread. I splurged and bought the pine nuts...it was worth it. The filling surprised me a bit because I wasn't sure what to expect with the rosemary but the hint of flavour simply enhaces the custard and adds a bit of a minty finish which is lovely. Will definitely make this again.
My pastry didn't want to roll out so I just took chunks of it and pressed it into the shell
