What a neat little surprise and a change of pace from the usual tomato soup. The tomatoes were not perfect for my roasted tomato and basil soup so I jumped to this recipe that I made last summer when someone wanted cream of tomato soup for lunch, perfect for lunch or dinner with a salad or sandwich.
I used several kinds of tomatoes this time as summer tomatoes aren't available, just adapt the recipe to your liking as far as tomatoes go…San Marzanos being a good choice here for part of the tomato addition.
A wonderful cream of tomato soup, can be made ahead and totally prepped for the next day.
