This is a really simple recipe for spinach soup, and it was a big hit with my Sunday linner crowd. I used the recipe in the book "Essentials of Classic Italian Cooking," which is one of my standbys. I linked to the most accurate online version of the recipe that I could find. The online recipe states low-fat milk but I used whole. I also used a stick blender to puree the soup. I served with Jack Bishop's tomato-mozarella tart in a basil-garlic crust. Nice light Sunday dinner.
Soup week has come at the perfect time for me--no more than two months after the last time I had my oven repaired, it has broken again! Luckily the gas range is still going strong.
