Soup Week - Tortellini Sausage Spinach Soup

Tortellini, sausage, and spinach soup.  The first soup using the homemade beef broth/stock made yesterday.

This is my own recipe made with Italian sausage and vegetables including fennel, onion, carrots, garlic, green pepper, spinach, and zucchini.  After last year's tortellini making fiasco, I buy the cheese and spinach tortellini.

Serve with a rustic or garlic bread, grated cheese, and a little crushed red pepper.

ICDOCEAN1 writes: Oh the tortellini, makes me laugh as well, as I recall I made a dozen or so, closed up the tortellini shop, made noodles for the kids and called it a day! Then I made the margarita to celebrate being done.
