I was at the fish market getting smelt, which my daughter absolutely adores ("minnows!!") when I spied this lovely golden trout. We had a lot of fun salt-crusting it-- making the crust and covering the fish is a great project for an energetic 6-year-old and whacking the crust is even more fun. Not only was this a good family project, but the results were superior. The fish was moist, perfectly cooked, and seasoned just right. Even my husband, who usually complains about fish really enjoyed this one.
