Classic Filipino recipe! Ask your butcher to slice a couple of pounds of pork belly about 1/3 to 1/2 thick lengthwise. Coat the pork with olive oil, and season with minced garlic, garlic powder, salt and coarsely ground pepper for about an hour.  This is best cooked on a charcoal grill in indirect heat.  A few minutes each side should suffice. Slice crosswise 2 inches wide once cooked. We dip this in a vinegar and crushed garlic sauce.  Really easy and if you love garlic, this is for you!

Shalori writes: Please include more "traditional" Filipino recipes. I live in a city of over 3 thousand and while there are Filipino stores and restaurants there are very few, if any really GOOD! traditional foods and desserts. Most of the recipes Ive seen on the net are incomplete or use very inexpensive ingredients, again... NOTHING of any quality. Would love to see and make some if posible.
