Cupcakes really appeal to my inner-child. The tender morsels were a staple at every childhood birthday party I attended, including my own, though they were considered more of a snack than a showpiece, a mere precursor to long-awaited birthday cake. As cake’s "less sophisticated" cousin, they were set alongside the chips and dip to be manhandled by swarms of sugar-buzzed 3rd-graders. The cake got all the glory, but the cupcakes were what interested me most.
That's why I'm shinning a light on these Coconut Chiffon Cupcakes with Lime Curd & Buttercream, by blogger Steph of Raspberri Cupcakes. I love all of the flavors involved in these cupcakes—especially coconut—and their sophistication appeals more to my inner-grownup than my inner-child.
Steph says she scoured her refrigerator for inspiring ingredients that could break her baker’s block, something we’ve probably all had. Next time you have baker’s block, Steph’s cupcake recipe may do the trick for you.
