Taking on Thai

It's a tradition in my family to let the honoree pick a birthday dinner, and it can be anything. Homemade, eating out, take out, anything. For my sister's 18th birthday, she wanted to try something different. She tried Thai food once before and loved it, and decided now was the perfect chance for the whole family to go out for an authentic meal. Unlike her, though, I had never. As strange as I felt for never having it when I have friends who rave about it, I was excited to finally get that chance.

We ordered a variety of dishes at different spice levels, which allowed me to experience the variety within Thai food. That's what sold me. I could have chicken, steak, or even vegetables with any kind of sauce or dressing I was in the mood for. It's a meal that could please virtually anyone.

It was also perfect timing. My mindset is starting to shift to going back to college, and I'm always looking for (relatively) easy and interesting dishes I can make on my own. After perusing my favorite food blogs, I stumbled upon Rachel Cooks Thai. It must be fate. There are many delicious looking recipes on her blog, but I thought I would start with something more traditional, but not any less tasty looking. The Yellow Curry with Chicken and Potatoes combines some of my favorite comfort foods with the traditional taste of the yellow curry-made with coconut milk, curry paste, and seasoned to taste.

This kind of recipe will challenge my kitchen skills, but will also expand my repetoire, not to mention, make me a superstar among my friends. And who doesn't love leftovers?
