I had never even heard of a charlotte before I attempted to make this dessert. Very nice but maybe a bit fussy for the result. Luckily I had a biscuit cutter that was exactly the size of the ramekin bottom!
I used vanilla paste instead of the vanilla bean and regular instead of apple brandy but the filling was still delicious. I also misread the directions and thought the sides should be fully caramelized (not the bottom!) so my Charlottes were a little brown!
