While some vodka companies are coming out with sweet flavors like caramel and wedding cake, the organic brand Square One has gone the savory route with cucumber, "botanical", and the delicious new basil flavor. My first thought would be to use the new flavor in a Basil Vodka Gimlet, but I stumbled upon this Piña Basil Collins recipe instead.
The drink, created by brand owner Allison Evanow, combines the basil vodka with pineapple juice to form the base of the drink. Then to give it some freshness she adds lemon juice and some simple syrup to balance that citrus. The splash of soda water adds a tiny bit of lift.
The end result is a fresh drink dominated by pineapple with a savory finish.
Piña Basil Collins

2 fl. oz. Square One Basil Vodka
1 fl. oz.Pineapple Juice
.5 fl. oz. Fresh Lemon Juice
.5 fl. oz.Simple Syrup or Agave Nectar
1-2 fl. oz. Club Soda
Pineapple Front for Garnish
Combine all ingredients except club soda into a mixing cup filled with ice. Shake briefly to blend. Pour into a Collins glass and top with soda. Garnish with a pineapple frond, should you happen to have one handy.
