Peanut Butter Chocolate Mousse Pie

An amazing dessert that is so light, and so easy to make... there are no excuses to pass this up!

Serves/Yields: 8 servings



Filling
3 Eggs
3/4 cup Sugar
3/4 cup Milk
1 cup Semi-Sweet Chocolate Chips
1 tsp Vanilla
2 cups Heavy Whipping Cream
1/4 cup Creamy Peanut Butter

Crust
4 tbsp Butter, Melted
1 cup Chocolate Cookies, crushed
*Or use graham crackers for a different twist

Topping
1/4 cup Creamy Peanut Butter
1 cup Powdered sugar

To start, mix the cookie crumbs with the melted butter and press into a pie pan. Bake at 350 degrees Fahrenheit for 8 minutes, remove and let cool.

Next, whisk together the sugar, milk, and eggs in a medium saucepan. Continuously stir and cook over low heat, until the mixture is thick enough to coat a spoon. This will take about 20-25 minutes. Do not rush this step. Turning up the heat will only give you scrambled eggs.

Remove the saucepan from the heat and whisk in the vanilla and chocolate chips until melted. Let cool a few minutes, stirring often.

Whip the heavy whipping cream. Once whipped add 1/4 cup peanut butter. Beat the peanut butter into the cream. Next, and fold in the chocolate mixture, and pour into the cooled crust.

To make the topping, mix the peanut butter with the powdered sugar. I use a fork or food processor. Pulsate so the mixture crumbles. Sprinkle over the top of the pie.

Chill at least 1 hour, best overnight. Serve anytime for an amazing treat the whole family will love!
