I love making pizza at home. It’s inexpensive, easy and takes virtually no time. As a matter of fact, I just made one a few minutes ago. But I have to admit, I am quite the minimalist when it comes to my homemade pies. I’m perfectly content with nothing more than a simple swirl of marinara, a few ribbons of caramelized onion, blankets of fresh mozzarella and a shower of fresh basil. Still, I’m always looking for new ideas.
So when I saw this recipe for Sweet Potato Kale Pizza with Rosemary and Red Onion that Josh made especially for Maria on their blog, Two Peas & Their Pod, I was instantly intrigued. These two home cooks are all about creating recipes that are “simple, fresh and family friendly,” and this pizza is all three.
I love the way they use seasonal ingredients that are packed with nutrients to top their pizza. Have fun with this one! You might substitute the kale for spinach, experiment with different cheeses or try butternut squash slices in place of the sweet potatoes. Use the freshest ingredients you can find and think vitamins and minerals here, people! Pizza doesn’t always have to be a greasy guilt food, especially after all those Halloween treats.
Fun Fact: Kale (along with watercress and collard, mustard and turnip greens) is the most nutritionally dense food on the planet with a perfect ANDI score of 1,000. ANDI stands for “Aggregate Nutrient Density Index” and is calculated based on the present micronutrients per calorie in a food. Some other high-ranking fruits and vegetables on the list are berries, red peppers, bok choy and butternut squash.
