It's OK! That's why Sarah and I want you all to know about this gratin, which uses everything healthy you forgot you had in you fridge.
All you need to do is grab some greens like kale, chard, spinach and herbs, some leftover cooked rice, quinoa or bulgur, and some Greek yogurt.
You cook the greens with shallots in olive oil, and then add the grains, some nutty parmesan cheese and an egg. The topping is a mixture of eggs, Greek yogurt and more parm and it becomes a thick, custardy crown when spread over the top of the gratin. That's pretty much all there is to it!
If you make this now, you will have no excuse to "forget" about your resolution until at least Monday. So go on! Clean out your fridge and fill up on greens and grains like you said you would.
