What to Do with Your Leftover Superbowl Beanscomments (0) February 9th, 2012 in Blogs
This is a great way to use up any leftover beans you might still have lingering in your kitchen from Superbowl festivities. It's a baked egg dish from a great, quirky food blog called Pink Basil. For the recipe Caroline says to definitely make the beans ahead of time, otherwise you might have to wait, oh I don't know, about six hours before you can actually eat this dish.
That's why I say, why not use leftover beans? If you've still got some beans left from your Superbowl party, this is the perfect way to use them up and have a great meal, all in one pot! The cast iron pan is important here, because it conducts the heat well to ensure that the beans, toast and eggs all cook evenly. But if you don't have a cast iron pan to use, any oven-safe skillet with a metal handle (not plastic) will work just fine.
This is a great meal for any time of day and is perfect to split with another person. I'd serve it with a simple greens salad with a light vinaigrette. It's hearty, filling and almost too simple to be true. I think I know what I'm having for dinner later!
