A Quesadilla to Make You Forget All About Meat

Meatless Monday. This is a food blog phenomenon that has been around for quite some time. I love seeing the different recipes that bloggers come up with sans meat. Though I'm not a true vegetarian, I don't usually eat a ton of meat. This isn't a conscious effort on my part, but a lot of time the food my body craves just isn't animal-based. 

Today, being that it's the first Monday of Lent, I thought it would be fun to do a Best of the Blogs post for Meatless Monday. So naturally, when I saw Kevin's recipe for Sweet Potato and Black Bean Quesadillas with Swiss Chard Pesto, I was hooked.

Kevin is the voice behind a creative, Canadian-based blog called Closet Cooking. He's all about trying new dishes and avoiding boring cooking ruts, but he does it all from his tiny "closet" kitchen. Get it?

The base of this meatless quesadilla is a chipotle roasted sweet potato and black bean mixture. You top it with cheddar cheese and cook it until everything is melted, gooey and warm. The Swiss chard pesto is packed with cilantro, lime and pepitas and makes for the perfect, bright condiment for these sweet and spicy quesadillas.

If you ever feel like you're in a cooking rut, Closet Kitchen is a great resource. And remember, if you're giving up meat for all of Lent, search Meatless Monday on any of your favorite food blogs and you'll be sure to find an array of vegetarian recipes to keep things exciting.
