While testing the Classic Blueberry Lattice Pie recipe from Fine Cooking #117, we found that the edge of the crust would brown earlier than the lattice, and the lattice often reached the right color before the filling was done. To solve this problem, we devised a two-piece foil shield—one piece protects just the edges, and one piece protects the whole pie from overbrowning. Here’s how we did it:
|Step 1: Fold a 12-inch square of heavy-duty foil in half, then in half again to make a smaller square. Note which corner is the center point.||Step 2: Fold diagonally through the center point to create a triangle.|
|Step 3: Fold again through the center point for a narrower triangle.||Step 4: Cut across the triangle in a slight curve about 4 inches from the tip.
|Step 5: Unfold the two pieces. You will have a square with a circular hole and a circle.||Step 6: To shield the edges once pale golden, fold the square around the crust. Use the circle to cover the lattice later on, if necessary.|
