The Talking Kitchen is one of my favorite blogs out there. Lauren is the witty, pretty darn hilarious "talking" part of the kitchen who loves to write about and photograph food...if you couldn't already tell just by looking at her blog. Gorgeous, right?
The site is all about good-for-you meals that utilize raw, nutritious, whole foods and how to twist traditionally unhealthy recipes into something fresh, health-conscious and satisfying. With Cinco de Mayo right around the corner, I figured that there would be no better place to send you for lighter versions of Mexican-inspired recipes, which are often incredibly fattening and heavy, than The Talking Kitchen.
Below is a list of dishes including starters, sides, entrées and even a drink for good measure. You can make one or all of these recipes for your Cinco de Mayo fiesta and feel good knowing that your guests will leave feeling full and well-fed, without that deep-fried, gooey cheese coma that often trails behind a Mexican food feast.

Sides and Sauces:
Of course, no Cinco de Mayo fiesta would be complete without a good, punchy, tequila-based drink to wash everything down. Lauren set up a "Battle of the Margaritas" where she tested out a basic recipe and added various fruits and veggies along the way. The candidates were pineapple, kiwi and cucumber. In the end the humble cucumber prevailed, but you could use any or all of these ingredients in combination with one another for margaritas that will have you kissing that pre-mixed sugar syrup goodbye.
