With everything our mothers do for us, it's no wonder they get their own day dedicated to them once a year. In case you hadn't heard, Mother's Day is on Sunday. Maybe you knew that already and were looking for a nice menu to put together for a Mother's Day brunch. Or maybe you'd forgotten and are now thinking brunch is probably the only thing you can pull off...oops! Either way, I've got just the blog for you. 

It's called Endless Simmer and it's run by a bunch of writers who are passionate about food and bringing you delicious, simple recipes in a humorous, don't-take-yourself-too-seriously kind of way. They've got some great breakfast and brunch recipes that would make for the perfect Mother's Day brunch. 

There's an Asparagus and Goat Cheese Omelet that is bright, rich and creamy with big dollops of goat cheese cooked right in. They've also got a great recipe for fingerling potatoes with leeks and crimini mushrooms cooked in a cast-iron skillet. The recipe calls for cracking an egg in at the end, but if you're already going to make that delicious omelet I just mentioned, you can forgo the egg all together and just enjoy the potatoes in all their crispy, cheesy goodness. 

For something on the sweet side, because every mom loves something chocolaty and decadent, there is a great recipe for Nutella Pastry Pockets. These pockets combine the classic creamy hazelnut and cocoa spread with slices of sweet banana. It's all wrapped up in buttery puff pastry and drizzled with melted chocolate. Next to a hot cup of her favorite coffee, these sweet pockets will be too darn delicious for mom to turn down. Right, Eva?

Do something special for your mom this Mother's Day. She'll be happy to see you sweating over the hot stove for a change!
