After a heavy-eating week like the one we just had with all of those Fourth of July festivities, it's nice to have some fresh, light dishes to turn to. Kelsey and Shaun, the happy folks behind Happyolks have this beautiful Apricot Mint Couscous that fits the bill perfectly.
It's seasoned with fresh mint, lemon, shallot and jalapeño and bursting with plump, sweet summer apricots. If you don't have Israeli couscous on hand at home, you can definitely use quinoa, wheat berries or whole wheat pasta as a substitute.
The thing to remember about salads like this is that you can customize them to suit your taste. You can use any fruit you prefer, especially if it's in season and you can flavor it with other types of citrus juices, fresh herbs and spices.
