I first tasted today's cocktail at a happy hour party at Tales of the Cocktail, an annual cocktail convention in New Orleans. I didn't know what was in it at the time, but I would have guessed that it had more than four ingredients. 

With tequila, lime, and honey we could call it a honey margarita, with a few drops of Tabasco sauce to give it some heat. But what makes the drink taste more sophisticated than it sounds is the choice of manuka honey.  Manuka honey comes from Australian or New Zealand, from bees that feed on the manuka tree. It has a really lovely sophisticated earthy flavor. 

The drink was created by Australian bartender Tim Philips, whom I'd just seen a couple weeks earlier in Brazil where he was competing in (and won) the Diageo World Class global bartending competition. I don't think he made this drink in the competition, but it's still a winner in my book. 

NOLA Tequila Mockingbird

1.5 fl. oz. Tequila Don Julio Blanco
2/3 fl. oz.  Manuka Honey Syrup (equal parts honey and hot water)
2/3 fl. oz. Lime Juice
5 drops Tabasco Pepper Sauce
Lime Slice for Garnish

Add tequila, honey syrup, and lime juice to a cocktail shaker filled with ice. Shake vigorously and strain into a rocks glass filled with fresh ice. Garnish with 5 drops of Tabasco and a lime.
