Pumpkin Soup with a Cheesy Twist
comments (0) October 2nd, 2012 in BlogsSo I'm scouring this wonderful blog, The Merry Gourmet, for something warm, comforting and seasonally appropriate. I was thinking of a recipe that incorporated pumpkin, sage and maybe some nuts or fragrant spices, when I came across Merry-Jennifer's Pumpkin Soup with Gruyère.
No wonder this recipe spoke to me! She adapted it from our recipe for Pumpkin Soup with Sage and Gruyère Croutons from a past issue of Fine Cooking! How cool is that?
Merry-Jennifer's version uses not only pumpkin, but sweet potato as well as fresh sage in the soup. Then she gives an extra grating of nutty Gruyère and a little dusting of cinnamon and nutmeg as garnishes to make all the flavors pop. If you use fresh pumpkin, definitely save the seeds and toast them in the oven with a little salt for another delicious, crunchy soup topping or a quick snack.
Make Merry-Jennifer's recipe for pumpkin soup this week and don't forget to check out The Merry Gourmet. Your mouth will be singing with the flavors of fall.
