Macaroni and Cheese for These Cool Autumn Days

All-American Mac & Cheese

I was really cold at work today, like shivering. And even though I layered my socks and had a thick sweatshirt and scarf on, I still felt like I couldn't shake the chill.

Because of this, all I wanted was macaroni and cheese. 

Then the guilt set in. So I decided to load my plate up with greens, chickpeas and a farro salad, to then allow myself a small scoop of warm, cheesy, comforting macaroni and cheese. And comforting it was, because it warmed me to the bone and was so, so satisfying. 

Carolyn over at the beautiful, educational blog Umami Girl has an awesome recipe for an All-American Mac and Cheese perfect for warming you up and for celebrating that little thing called American Cheese Month I was telling you about last week.

Don't feel bad about making a batch of this comforting classic. As long as your plate is balanced with plenty of leafy greens and lean protein, a scoop or two of this rich, creamy pasta dish won't kill you.

The worst that could happen is that you might fall into a cozy little slumber once you're done eating. You know, all warm and fuzzy feeling. No worries, you deserve it.
