Grow zucchini, and by late summer, inevitably, you end up with more than you know what to do with. You could freeze it, but there are some drawbacks. I recommend preserving squash by turning it into this sweet, tender quick bread. I promise, you'll have no problem unloading your extra zucchini this way (who wouldn't want a slice of chocolaty bread?) and the bread freezes extremely well.
