what is it?

Chipotle chile powder is made up purely of dried and ground chipotle chiles (as opposed to standard "chili powder," which is actually a mix of ground chiles with several spices like oregano, garlic powder, and cumin). It has a moderate heat level with fruity undertones. Its smoky heat makes it great in grilling rubs, barbecue sauces, and chilis.

don't have it?

Substitute another smoked chile powder or smoked hot Spanish paprika; because heat levels vary, you may need to adjust the amount

how to store:

Store in a cool, dry place.

bogden95 writes: I finally found some dried chipotle peppers at a small neighborhood Mexican market (the kind of spices that are in a little package hanging on racks). I am going to grind them myself - I've had no luck finding the ground chipotle anywhere around here, even though there is a large Hispanic population. Maybe you can find something similar locally and try it - I'd recommend putting in a little and tasting first because it's hard to know how strong these dried ones will be once ground!
